EditIn 2007, a modest Shanxi sliced noodle shop spanning just a few dozen square meters quietly opened on Diantan Road in Harbin. With its unique flavors and affordable prices, it quickly became the most popular noodle shop in the area. This was the predecessor of Gao Kui Sliced Noodles.
Before this, founder Mr. Gao Kui was a chef specializing in noodle-making. Years of immersion and influence in the craft fostered his deep passion for noodles, driving him to dedicate himself to exploring and preserving China’s traditional noodle culture.

To achieve this, founder Gao Kui made multiple trips to Shanxi, exploring its streets and alleys, and ultimately crafted a bowl of sliced noodles with a rich bone broth and a chewy, smooth texture.
The dish starts with a bone broth base, made by carefully selecting a combination of beef leg bones, beef tail bones, and pork ribs, paired with various Chinese herbs and spices. After boiling over high heat, it simmers slowly for hours, resulting in a fragrant, savory, and mellow broth.
The noodle-making process is even more meticulous.
After countless trials, Gao Kui perfected the flour ratio, creating a dough that is smooth on the outside and firm inside. When slicing, the dough doesn’t stick to hands or the knife, falling gracefully with each cut in a fluid motion.
Once cooked, the noodles are served in the bone broth and topped with a generous spoonful of a secret sauce, resulting in a bowl of chewy, smooth, and spicy sliced noodles.
